God Bless You! It sounded like someone sneezed. But in reality, kombucha is a fermented tea full of nutrients. Those seeking to further their healthy kitchens and increase the goodness of what they are consuming are into this latest food phase.

Kombucha is a live organism that feeds off of tea and sugar. So all I have to do is brew a little tea of my choice, add some honey and feed my little creature.

I think it is just one further step in the right direction. My husband thinks I´m getting a bit weird. "Soon you´ll be smoking stuff," he said. Hmm. Well, after carrying a one gallon jar of tea with a floating mushroom biscuit of good yeast and cultures around the village, I cannot blame him.

The Maker´s Diet

Just a couple of weeks ago I read a helpful book, "The Maker´s Diet" by Jordan Rubin. Within a couple of days I was driving all over the Alpujarra looking for kefir and kombucha starters to make my own fermented drinks. I started soaking everything. My counter was covered with bowls full of sesame and sunflower seeds, walnuts, cashews, almonds, lentils, and garbanzos. And rice.

Soon mung beans and wheat berries joined the soaking circus. All to join the fight for good bacteria to come on in and fight the bad. Better probiotics. Learning the importance of eating live foods. And the method.

Defeat Disease

There is much to be gained. For years I have been losing the battle with anemia, gluten intolerance, adrenal insufficiency, allergies and asthma. Most recently an ulcer joined the line up. Apple cider vinegar is a good combatant, but I needed some more help.

So this is the road I´m taking. Soaking every grain, nut, seed and bean will release the bad enzymes the body can´t break down, which increases the nutrients my body receives from the food as much as 50%! And that is good. Already I am feeling the benefits.

Increase Your Energy

I have more energy. I will soon stop taking my vitamins and supplements. I expect all my ailments to reverse. I do believe God can take away all of these in an instant. I also believe He has given me the wisdom to do it by how and what I eat.

I am enjoying drinking goat´s milk, and making kefir and yogurt with it. Oh, and ice cream, too. Soon I will give making soft cheeses a go. But for today it is one step at a time. I will let you know how it is going. I can already tell you that my ulcer is going away.

Isn´t God a giver of good gifts?
